This course will examine transitional events in North American history that have influenced our relationship to food and farming, with an emphasis on environmental, economic, and social change in American agriculture. This interdisciplinary survey will focus on the history and science of agriculture during the pre-colonial, revolutionary, slave plantation, westward expansion, and mid-20th century periods.
