This course will examine transitional events in North American history that have influenced our relationship to food and farming, with an emphasis on environmental, economic, and social change in American agriculture. This interdisciplinary survey will focus on the history and science of agriculture during the pre-colonial, revolutionary, slave plantation, westward expansion, and mid-20th century periods. It will explore how these transitional periods have shaped initiatives that drive land use patterns, crop and livestock improvement, and agronomic practices to the present day.
